Allie's Enfrijoladas

It's yummy but very messy. It's like making Enchiladas with a different Mexican twist.

Add all ingredients to Shopping List

1.5 cup Refried Beans (home made or canned)
1 cup Queso Fresco (its very similar to a very mild feta cheese)
1 cup Finely chopped onions
3 tortillas
3 tbs Sour Cream
1/2 cup Salsa Verde (home made or canned)
3 slices tomatoes (optional)


Warm your tortillas in a skillet or microwave. Once you have done so, dip your tortilla into the refried beans and make sure both sides are evenly covered. Place your bean covered tortilla flatly on a plate and put a tablespoon or more (per preference) of cheese. Do the same with onions. Roll your tortilla into a taquito. Repeat process until all tortillas are stuffed and rolled. Place sour cream and salsa ontop of your Enfijoladas and garnish with tomato (optional)
