INGREDIENTS

1 Large Potato
2 Cloves Garlic
1 Anaheim Chili
1 LargeTomato
1 Medium Onion
1 cup Raw Baby Spinach
1/4 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Garlic Salt
1/4 tsp Dried Rosemary
1/4 tsp Dried Basil
1 tbsp Butter
3 Eggs
1 tbsp Olive Oil
1 tbsp Hot Sauce
2 tbsp Lemon Juice

DIRECTIONS

1. Pre-heat pan, adding butter, olive oil, garlic and sliced potato, rosemary salt and pepper. 2. After potato has browned, add chopped onion, chili, lemon juice and tomato, and cook until tomato is soft 3. Stir in eggs and spinach 4. Serve and enjoy
