INGREDIENTS

2/3 cup Butter
2/3 cup All purpose flour
7 cups Milk
6-7 small/medium Potatoes, peeled, boiled to light firmness, cooled, and cubed
4 Green onions, sliced
4 strips Bacon, cooked crisp, and crumbled
1 1/2 cups Shredded cheddar cheese
1 cup Sour Cream
3 stalks Celery - optional
1/3 cup White onions, diced
To taste Salt and Pepper/Paprika
Optional Sourdough Bread bowls

DIRECTIONS

1. In a large pot, melt the butter and diced white onions over low/medium heat. 2. Once butter has melted, stir in the flour on medium heat, and stir until smooth 3. Gradually add milk, stirring constantly until thickened 4. Add potatoes and Celery, stir together 5. Bring to a boil, stirring constantly 6. Reduce heat; simmer for 10-20 minutes 7. Add cheese, bacon bits, and sour cream. Make sure to keep some extra cheese and bacon bits left over for toppings 8. Add salt, pepper/paprika for taste if needed 9. Stir until cheese is melted, and serve in your favorite bowl or Bread bowl immediately!
