1 cup Old fashioned oatmeal
1/2 cup Pecan halves
1/2 cup Selects Post Great Grains (Raisins, Dates, Pecans) Whole Grain Cereal
1/4 cup Kretschmer Honey Crunch Wheat Germ
2-1/4 cups All-purpose flour
1 teaspoon Baking soda
1/4 teaspoon Salt
1-1/3 cups Butter-Flavored Crisco shortening (at room temperature)
1/2 cup Granulated sugar
1-1/2 cups Light brown sugar
2 Extra large eggs
2 teaspoons Coconut extract
1 teaspoon Vanilla extract
3/4 cup Coarsely chopped mixed nuts
12-oz.pkg. (Totaling 2 cups) semi-sweet chocolate chips (or a combination of semi-sweet chocolate chips, white chocolate chips, and cinnamon chips). I used the combination.


Preheat oven to 375 degrees. Pulverize in a blender or a food processor (in two batches) first 4 ingredients (measuring ingredients before pulverizing. Place in a large bowl. Add flour, baking soda, and salt. Mix well and set aside Cream shortening and sugars until light and fluffy. Add eggs and extracts and beat thoroughly. Remove bowl from mixer, and add chopped mixed nuts and chocolate chips or chocolate chips, white and cinnamon chips combination, combining well. Add to flour mixture and combine thoroughly. Roll into medium-large size round balls and place 1-inch apart on an ungreased cookie sheet. Bake 10-13 minutes or until delicately browned. Cool slightly on baking sheet before removing onto wire racks. Cool completely on racks and store in a cookie container. Cookies freeze well. Makes 29 cookies. If making larger or smaller cookies, count will vary.
