Also known as "Tortang Talong," this omelette is extremely easy to make and a great meal for anytime of the day - breakfast, lunch, or dinner. A Filipino favorite!

INGREDIENTS

1 medium eggplant
2 large eggs, beaten
as needed salt and pepper (to taste)
1 tbsp extra virgin olive oil

DIRECTIONS

Place eggplant over an open flame for approximately 4 minutes or until tender (the eggplant skin should be charred and blistered). Let the eggplant cool for several minutes. Once cooled, peel off the eggplant skin and gently mash the meat with a fork until flattened. In a separate bowl, whisk the eggs and season with salt and pepper (to taste). Mix eggplant and eggs. In a skillet, pour approximately 1 tablespoon of extra virgin olive oil over medium heat. Add eggplant/egg mixture and cook for approximately 2 minutes (or until golden brown). Turn to other side and cook for an additional 2 minutes. Optional: add onions, tomatoes and/or ground beef to this recipe for more flavor.
