1/2 Large Onion
1/2 Large Red Bellpepper
2 Peeled Potatoes
3 Eggs
6 Tbsp Olive Oil (for frying)
Optional Salt and Pepper (to taste)


Potatoes, Onion and Bellpepper: Heat half of your olive oil in a frying pan. While the pan is heating, dice the potatoes into bite-sized pieces. Using a microwave-safe plate, microwave the potatoes for about 3 minutes (this will speed up the process and ensure that you don't overcook the potatoes). Add potatoes to the frying pan and make sure to break them apart (the microwave tends to make the potatoes stick together). While the potatoes are cooking, dice the onion and bellpepper into bite-sized pieces. Add chopped onion and bellpepper to the potatoes and cook until golden brown. Pour mixture onto a serving plate. Eggs: Heat the rest of your olive oil in a clean non-stick pan. While the pan heats up, break all three eggs onto a plate. Using a fork, mix the egg whites (don't break the yolks!) to create a consistent texture - this will make it easy to flip them later on. Pour the eggs into the hot oil and cook until the egg whites are almost fully cooked. Flip the eggs and cook on high heat for another 10 seconds or so. Pour the eggs over the potatoes, onion and bellpepper. Season with salt and pepper to taste. Using a fork, break the yolks and allow them to soak into the potatoes. Finally, enjoy! **For added nutritional value, use baby potatoes and leave the skin on. Also, you can add other meats and vegetables to boost the food value, such as ham, spinach and tomatoes (as pictured).
