INGREDIENTS

4 medium potatoes
1/2 green pepper
1/2 sweet onion (vadalia onion)
2 tlbs canola oil
1 tsp garlic powder
to taste salt
to taste black pepper

DIRECTIONS

peel and slice potatoes into rounds(like you would cut them for scalloped potatoes).Dice green pepper and onion. Combine potatoes with the green pepper,onion,garlic powder,salt and pepper. Heat oil until it is very hot. Brown potatoes for 5-6 minutes. Transfer potatoes to a baking dish,cover with foil and finish cooking in a 375 degree oven for about 20 minutes.
