Jack Burton's Breakfast Burrito

A relatively simple alternative to a bowl of cereal. The breakfast burrito is easy to make and even easier to eat. This recipe is for one burrito. To make more just double the ingredients

2 Eggs
1 Potato
1 Onion
1 Tortilla Shell
1 tsp Salt
1 tsp Pepper
1 tsp Green Tabasco
1 tsp Olive Oil
1 tsp Parsley
1 tsp Milk


Dice potato into bite sized chunks. Dice onions into tiny pieces. Heat potato and onions on Olive Oil greased pan at medium to high heat. Mix eggs, 1 tsp Milk and a few Parsley flakes together. Stir potato & onion to prevent from burning. Cook potato & onion until potato's are soft. Pour egg, milk and parsley concoction over cooked taters and onions. Mix ingredients and cook for a few minutes. Heat up Tortilla shell. Add Tabasco (if needed) to ingredients. Place ingredients on tortilla shell and fold. Serve.
