INGREDIENTS

Add all ingredients to Shopping List

1 full celery
4 carrots
2 shallots
3 full garlic heads
2 onions
2 bay leaves
2 large sprigs of rosemary
1 cup dry white wine
2 quarts cold water
2 chicken carcasses
1-2 Tomatoes
1-2 Bell Peppers
1 Cabbage

DIRECTIONS

Roughly chop all vegetables enough to fit in large stock pot. Cover all ingredients with water and wine. Bring to a boil and immediately reduce heat and simmer uncovered for at least 3 hours (but the longer the better!) Remove the bones and strain stock.
