INGREDIENTS

6 chicken breats, diced
1/2 red onion, diced
3 cloves garlic, minced
1 cup dry white wine
1 10 oz package of greek style yogurt
2 12 oz bags of frozen artichoke hearts
2 lemons zested and juiced
1/4 cup minced italian flat-leaf parsley
to taste salt
to taste pepper
4 tbs Extra Virgin Olive Oil
3 tbs capers
1 10 oz package of sliced mushrooms

DIRECTIONS

1. Add chicken, salt, pepper, olive oil, yogurt, lemon zest, and lemon juice to a bowl. Allow to hang out for a bout 30 minutes. 2. Saute onion and garlic in olive oil until translucent. 3. Add wine. Allow wine to reduce to 1/2. 4 Add chicken mixture. Saute for 20 minutes at medium low heat. 5. Add artichokes. Saute 20 minutes longer. 6. Add mushrooms, capers. Saute 10 minutes longer. 7. Toss in parsley. 8. Serve with your favorite pasta or rice.
