This healthy meal of chicken and pasta offers a lighter alternate to heavy tomato or cream sauces, but is sure to please. Feel free to add your twists like extra veggies, or parmesan cheese.

INGREDIENTS

2 Tbsp Grapeseed or Olive Oil
3 Roma Tomatoes, peeled, seeded, and diced
1/2 Cup Sun-dried Tomatoes, julienned
2 Tbsp Green Onions, sliced
10 oz. Can Chicken Breast
1/2 Cup Chicken Broth
8 oz. Cooked Bowtie Pasta, or other similar small pasta
To taste Pepper
To taste Salt
1 Tbsp Fresh Parsely, chopped

DIRECTIONS

Heat oil in skillet, keep on low heat. Add diced tomatoes and saute for 30 seconds. Add sun-dried tomatoes and green onion, saute for 30 seconds. Slowly add chicken and chicken broth, stir well and gently simmer for 3-5 minutes, or until all ingredients are tender. Toss tomato and chicken mixture with hot pasta, adding the chopped parsely and salt and pepper to taste. Ensure all ingredients are well combined. Serve with parmesan cheese, if desired.
