INGREDIENTS

Add all ingredients to Shopping List

1 stick softened butter
1 cup sugar
2 eggs room temperature
1 tsp vanilla
1 1/2 flour
2 tsp baking powder
1/2 tsp salt
3/4 cup grated carrot
3/4 cup pecans
1bs cinnamon
2 tbs orange juice

DIRECTIONS

1. Preheat oven to 350 2. Cream together butter and sugar. Add the eggs and vanilla. 3. Mix all the dry ingredients together. 4. Add the dry ingredients to the butter mixture. Add one half at a time. 5. After all the ingredients have become incorporated add the carrots. 6. Add the nuts. 7. Put into cupcake tins. 8. Bake for 14 minutes or until done.
