Mediterranean Roasted Vegetable Dip

1 eggplant
1 red onion
2 bell peppers
3 cloves garlic
1 12 oz bag of frozen artichoke hearts (thawed), can also use canned
3 tbs Extra Virgin Olive Oil
to taste salt
to taste pepper


1. Preheat oven to 400. 2. Dice all of the vegetables into bite size pieces. (Leave the artichokes whole.) 3. Toss the vegetables with Extra Virgin Olive Oil and salt and pepper. 4. Spread the veggies out on two baking sheets. 5. Roast for 40 minutes or until very soft. 6. Allow veggies to cool. 7. Put veggies in a food processor. Pulse until at desired consistency. 8. Serve with veggie sticks or pita chips.
