INGREDIENTS

3/4 lb Orzo Pasta (cooked)
3 Green Onion (chopped)
1 pint Grape or Cherry Tomatoes (halfed)
1 large Cucumber (peeled and deseeded)
3 tbls. Dijon Mustard
1/4 c White Wine Vinegar
1/4 c Fresh Dill (chopped)
1/2 c Olive Oil
Pinch Salt and Pepper (to taste)
16 oz. Feta Cheese (crumbled)

DIRECTIONS

Combine orzo, green onions, tomatoes and cucumber, in a large bowl. Add mustard, vinegar and dill to food processor or blender until smooth. Slowly add the olive oil and blend 10-20 seconds. Season with salt and pepper, to taste. Pour dressing over orzo mixture and combine. Gently fold in the feta cheese. Optional, cooked chicken or grilled shrimp.
