1 Cup White Long Grain Rice
1 Tbs Olive Oil
2 Cups Hot Water
2 Cubes Chicken Boullion
1 Cup Roasted Red Peppers
1/2 Cup Basil Pesto in Oil
2-3 Basil Leaves

DIRECTIONS

on high heat, brown rice in olive Oil for about 2-3 mins. Stiring continuously. Add hot water, chicken boullion cubes, roasted red peppers and basil pesto. Bring to boil and then reduce heat to low. Cook for 12-15 mins. Optional - Top each each with fresh basil leaves
