Healthy Tuna Salad & Yogurt Dressing with Artichokes, Tomatoes, Mangos, Olives, and Tofu

3-4 Oz Tuna, seared then choped. Subst: 1 Can Albacore Tuna in Water
1/2 Cup Mango, diced
1/4 Cup Black or Greek Olives (Pitted/Drained) chopped
6 Oz Jar Artichokes sliced
1-2 Hard Cooked Eggs
1-2 Plum Tomatoes diced
1/3 Cup Tofu chopped. Subst: Feta Cheese
1/4 Cup Lime Juice
1 Tbs. Canola or Olive Oil
4 Romaine Leaves
4 Tuscan Chalah Bread Slices
To Taste/Optional Paprika, Chives, Sage, Curry Powder, Parma Seasoning
1 Tsp. Pepper, Salt to Taste
6-8 Oz Yogurt Dressing: Greek Yogurt Plain/Vanilla
1 Tsp. Canola Oil
1 Tbs. White Vinegar
1 Tbs. Lime Juice from fresh Lime. Subst: Bottled


Prepare fresh Tuna by grilling in oven with a few drops of lime juice, sage and pepper. Chop Tuna and toss in salad bowl with next 6 ingredients. Pour lime juice and oil over salad, toss, and season with spices (paprika, pepper, salt). Wash leaf leaves (dry), and arrange on serving platter. Slice Tuscan Bread, place around plate, top bread with sliced olives, chives, and a few drops of oil. Serve with Yogurt Dressing individually or pour dressing over large salad. Sprinkle Bread slices with curry powder or Parma Seasoning.
