I basically did this recipe for the first time on the video with idea in mind and left over this and that in the fridge. In further research, the recipe needed a little more tweaking so

Recipe Ingredients & Directions

INGREDIENTS

Add all ingredients to Shopping List

6-8 lg. zucchini
2 cups grated mozzarella
1 chopped onion
2-3 Italian sausage or 1 pound Italian seasoned turkey
1 egg
1/2 cup bread crumbs
2 cups spaghetti sauce of your choice
1/2 cup grated parmesan cheese

DIRECTIONS

Add tablespoon of olive oil to skillet over medium heat. Brown & drain. If cooking Italian sausage, squeeze sausage meat from casing. Slice each zucchini in half lengthwise. Place in boiling water 5 minutes to soften. Scoop out each half to form hollow "boats." Combine zucchini pulp and cheese, onion, egg, bread crumbs and sausage; Mix well. Spoon into boats and cover with spaghetti sauce. Sprinkle with Parmesan. Cover with foil. Bake at 350 degrees for 30 minutes.
